In the 1600s, it was found that molasses from sugar cane could be fermented and distilled, creating a ‘rugged and unrefined’ new spirit – Rum. Originating from the Caribbean, distilleries would use exotic ingredients grown around their plantations to flavour their spirits, therefore creating unique flavours specific to their plantation. These flavours developed to use spice blends ( aka spiced rum as we know today) and tropical fruits such as coconut and pineapple. Unfortunately, this tipple soon became well favoured by the New Englanders and a new history began.
